Tis the season for zucchini, it’s growing like crazy! You can grow it pretty easily which makes it a great vegetable to add to your garden. Plus it has so many health benefits that eating more of this tasty food will only up your awesomeness.
So here is all the nitty gritty science stuff, just incase you were interested, it contains vitamin A, magnesium, folate, potassium, copper, and phosphorus . Also has a high content of omega-3 fatty acids, zinc, niacin, and protein. And, vitamin B1, vitamin B6, vitamin B2, and calcium.
Wow, now that is sure to punch a bit of power into your body. But put simply it’s a vegetable and it’s good for you and eating more vegetables is always the way to go to improve your health.
So this little guy is so versatile, from zucchini noodles, to muffins to a great breakfast option so here it goes how to eat more zucchini for breakfast with this killer recipe.
Zucchini Power Breakfast Recipe. Serves 2
2 slices of Ezekiel Bread ( or any other toast you love) Toasted
2 Cage Free Eggs poached ( I used apple cider vinegar to poach eggs)
1 Cup of zucchini cut into 1 inch slices then cut into quarters
1/4 red onion
1/4 red pepper diced.
2 garlic cloves
1 tablespoon of olive oil
1 tbls of organic chicken broth
1 tsp of tamari ( soy sauce)
A tiny squeeze of lemon
Salt and pepper to taste
Saute onion until soft, then add garlic & red pepper, cook for another 2 minutes. Add chicken broth then add zucchini and cook until slightly soft, for about 5 minutes. Then add tamari, lemon and salt and pepper to taste.
Place poached eggs onto top of toast then a top with the vegetables ad enjoy!
